An ancient cattle breed, Black Angus quality takes its name from the Scotland area, Aberdeen, where it has its origins. The reduced size, a rounded and compact trunk, a huge muscular mass and the high weight make it a bovine typically used for the meat. The technical methods of breeding, mixed with a diet based on corn, wheat and hay create the ideal condition for a constant growth of the animal until complete development (12-15 months). During the final phase of their lives, bovines are fed with corn, thing that makes the meat sweeter and allows a better marbling.
Considered of a superior quality, the chop is characterized by a very tender cut and an intense and persistent flavor.
